Forty nine years ago, Alice Waters didn’t know, or care, that a quarter of new restaurants close during their first year of operation. Seventy percent of those that make it past the first year close their doors in the next three to five years. If seven dog-years dog equal one human year, a restaurant-year is about 16 human years. Compared with the average human lifespan of 72, Chez Panisse is coming up on the age of the Biblical Methuselah.
